Easy and Simple Chicken Soup

This is a very simple recipe with minimum ingredients and preparation. All you need to do is cut the vegetables and place them into a slow cooker, and it will do the rest for you. Slow cooker is a great helper in the kitchen, that brings out the flavor in foods and provides you with healthy meals as it uses a low temperature for cooking. You can use different vegetables if you like.

Ingredients:

  • 1 onion, finely chopped

  • 1 celery stick, chopped into 1 cm pieces

  • 2 carrots, chopped into 1 cm pieces

  • 5 small potatoes, chopped into 1 cm pieces

  • 2 chicken breasts

  • 1 small bunch of parsley, finely chopped

  • 1 small bunch of coriander, finely chopped

  • 5 cloves of garlic, pressed

  • 1 chicken cube stock

  • salt, pepper and optional chipotle flakes

  • 2 cups of boiling water (or more if needed, depending on the size of your cooker)


Method:


STEP 1

Place the vegetables and chicken breasts into the cooker. If you are using a chicken stock cube melt it in a cup with hot water. Pour the stock into the cooker and add boiling water so that everything is soaked in water. Cook for 6-8 hours on low temperature setting.


STEP 2

Once cooked, remove the chicken breasts from the slow cooker and place them on a cutting board. Shred the meat using a fork and a knife, return the shredded meat into the cooker and stir well.
