Delicious Lentil Salad Full of Different Flavours

I am a big fan of batch cooking as it saves you a lot of time spent on cooking.

The ingredients gave me around 8 portions, but you can reduce the amounts to make less if you wish.


Ingredients: ✔️ 1 bag of green lentils (500 g)

✔️ Around 15 medium sized gherkins ✔️ 1 jar of pickled grilled peppers (280 g) ✔️ ½ of big white onion or 1 small onion - finely chopped ✔️ 3 boiled eggs ✔️ 1 tablespoon of olive oil ✔️ 1 teaspoon of vinegar - taste before adding, the gherkins are already soaked in vinegar ✔️ Pinch of salt and pepper to taste


Preparation: 1. Boil the lentils until soft (you can soak them before hand to speed up the cooking) and once cooked, let the lentil cool down and place it into a big bowel. 2. Boil the eggs and let them cool down. 3. Cut the gherkins into small cubes and the peppers into even smaller pieces and add everything in the bowel. 4. Add the olive oil, vinegar, salt and pepper and mix well. 5. Peel the eggs, cut them into small cubes (it is better to use a cutter for eggs) and add them in the bowel. 6. Gently mix so that the eggs don't break. Keep it in the fridge.
