This is a very simple recipe with minimum ingredients and preparation. All you need to do is cut the vegetables an place them into a slow cooker, which will do the rest for you! Slow cooker is a great helper in the kitchen, that brings out the flavor in foods and provides you with healthy meals due to using low temperatures.
If you don't have a slow cooker yet, you can get one here:
1 onion , finely chopped
2 celery sticks, finely chopped
3 carrots , chopped into 1cm pieces
1 leek , halved and sliced
2 chicken breasts
1 lemon, juiced
1 small bunch of parsley, finely chopped
1 small bunch of coriander, finely chopped
5 cloves of garlic, pressed
1 chicken cube stock
2 cups of water
Place the onion, celery, carrots, leek, garlic and herbs in the slow cooker. Put the chicken breasts on top of the vegetables, pour over the stock and add boiling water so that everything is soaked in water. Cook for 6-8 hours on low temperature.
Remove the chicken breasts from the slow cooker and put them on a board. Shred the meat using a fork and a knife and then return the meat to the slow cooker. Stir in the lemon juice.
